What’s your morning routine before work?

The routine is more or less the same. A typical day starts with a cup of coffee, Skype with my wife and kids, and checking emails.

How do you decide what to wear in the morning?

I’m a practical man so if I’m heading to work I will pick a clean polo shirt and jeans. That’s the beauty of living in a sunny place.

Three kitchen items you can’t live without?

A knife, chopping board and a wok.

Favourite place you like to go to in Dubai?

Definitely the night markets and my favourite restaurants. Both are always great source of inspiration.

What did you do last night?

What I do most nights – I was busy cooking in the Hakkasan Kitchen.

With my wife and four kids on a beach.

What is your favourite dish to create in the kitchen?

Osmanthus beef is definitely one on my favourites.

Tell us a fact about you that nobody knows.

I worked for cruise liners for almost 10 years and I don’t know how to swim.

What ingredients can you not live without?

Ginger, garlic, spices and jasmine rice.

What has been your favourite moment working with Hakkasan?

Joining the company was a great pleasure in itself but it’s always great when my team is recognised by our guests or by a judging panel for the Best Asian Cuisine in Dubai. That’s always the icing on the cake!

Who would you like to be stuck on a desert island with?

My wife and no kids!

Three things you hate?

People that are dishonest or fake; those that blame other people for things, and disrespect.

What’s your personal motto?

No pain, no gain.

How do you want the world to remember you?

As a loving husband and father who is passionate about his job and team members.
