Planning a winter escape to Sydney? There is nowhere hotter right now that The Old Clare Hotel. An old pub and brewery administration building has been converted into a boutique 62 room hotel that combines distressed brickwork with sleek mid-century inspired bars and sleek technology.
The C.U.B suite was once a boardroom and the bathroom, the executive men’s bathroom. The hotel has kept the parquetry floor, cornices and paneling and added a library, separate sleeping quarters and a dining area to this 100 sq metre space.
Located in the trendy suburb of Chippendale, which is home to the most exciting art galleries, bars and restaurants the hotel hosts everything from pop up markets to food tastings.
The hotel is home to three restaurants from superstar chefs, including British Michelin-starred chef Jason Atherton. His Kensington St Social restaurant will operate as an all-dayer, while Automata brings a changing seasonal five course menu out to play and Silvereye from Sam Miller uses his Noma experience on Australian ingredients.
